Nutrition Research Institute shows that eating healthy can taste good, too

Good nutrition doesn’t have to be bland or boring, believes Steve Zeisel, MD, PhD, Kenan Distinguished Professor of nutrition and director of the UNC Nutrition Research Institute on the N.C. Research Campus in Kannapolis, N.C. On Nov. 13, Zeisel welcomed Peter Reinhart, a chef-on-assignment in the culinary arts program at Johnson & Wales University’s Charlotte, N.C., campus, to demonstrate how healthy food choices also can be delicious. Also participating in the event was retired Carolina Panther football player Mike Rucker. Reinhart is co-founder of the legendary Brother Juniper’s Bakery in Sonoma, Calif., and author of five books on bread baking, including The Bread Baker’s Apprentice, named cookbook of the year in 2002 by both the James Beard Foundation and the International Association of Culinary Professionals.
