CHAPEL HILL — A new nutrition textbook authored by Dr. John J.B. Anderson, a professor of nutrition at the UNC School of Public Health, was recently published by Carolina Academic Press.”Nutrition and Health: An Introduction,” focuses on the long-term dietary patterns and biological mechanisms that contribute to the health of North Americans. The book is designed for students pursing health careers, such as those in medicine, dentistry, or veterinary medicine, and for those planning to attend graduate programs in the biochemical and molecular biology fields. Book topics include: social and behavioral aspects of nutrition, nutrients in the body, nutrition through the life cycle, and nutrition-disease relationships.

Student exercises are provided for each chapter. A few colleges and universities have already adopted the book for the fall semester.

Contributors to the book include Dr. Sanford Garner, a pharmacologist in the Research Triangle Park, who created text diagrams; and Dr. Martin Root, a nutritionist in the Research Triangle Park, who assisted in sharpening the epidemiological focus of the book.
